Sausage French Toast Roll Ups

 


Sausage French Toast Roll Ups


Ingredients

8 slices of bread with crust cut off

1 package of sausage links

1 egg

1/4 C milk 

1 Tsp Cinnamon

1 Tsp Nutmeg


Directions

Cook your sausage till they are done. Set aside on a plate. Next take your bread with the crust cut off and roll it flat with a rolling pin. Next in a bowl mix your egg, milk, cinnamon and nutmeg. Set aside. Now take your sausage link and wrap it in a slice of bread. Next take the roll and put it in the egg batter. Put it in a frying pan and keep an eye on it. Roll it around so it evenly gets cooked. Once they are all done, dust them with powdered sugar and serve with warm maple syrup. Eat and enjoy!

Coca Cola BBQ Chicken Sandwiches

 



Coca Cola BBQ Chicken


Ingredients

Chicken Breasts

 (3-4 Depending on how many you are feeding)

Coca Cola BBQ Mix

1 1/2 Your favorite BBQ sauce

1/2 C Coca Cola

2 T Soy Sauce

 (Low salt you can use amino acid, and Worcestershire sauce)

1/2 Tsp Brown sugar

1/4 Tsp Nutmeg

Drizzle of maple syrup

Directions

Lay Chicken breasts in the crock pot. Cook on high for four hours till it shreds. In a bowl mix your bbq mix and pour over shredded chicken and mix. Put it on high for another half hour. 


Serve it on a roll with onion and cheese. 

Cheddar Sour Cream Drop Biscuits

 


Cheddar Sour Cream Drop Biscuits


Drop biscuits are the easiest biscuits to make. A lot of people get scared of biscuits. Try these!! 


Ingredients

2 C. Flour

1 T.  Baking Powder

1 Tsp Salt

1/3 C Butter cubed

1 C of Shredded Cheddar

1/4 C Sour Cream

2 Tsp Parsley

2 Tsp Dill

1 Tsp Garlic Salt

1 Milk 


In a bowl mix your flour, baking powder and seasonings. Add your chopped butter and cut it so that you have pebbles. Add in your sour cream, milk and cheddar. Gently mix till all combined. Take a spoon and drop mixture on a cookie sheet. Bake 20 minutes or until golden. Eat and enjoy!

Ingredients

2 C. Flour

1 T. Baking Powder

1 Tsp Garlic Salt

1 1/2 Tsp Garlic Powder

1/3 C Butter diced up

1 C Buttermilk 

1 1/2 C Shredded Parm


Directions

In a bowl mix your flour, baking soda, salt, garlic powder and mix. Then add your cut up butter and cut it into the flour mixture so it resembles fine crumbs. Stir in your buttermilk and shredded parm. DO NOT over mix. Now you will spoon mixture into a baking sheet. Just spoon it and drop it. Easy!! Bake for 20 minutes or so at 350 degrees. They need to be golden brown.  Take them out and let them cool.

Buffalo Ranch Jalapeno Popper quesadillas

 


Buffalo Ranch Jalapeno Popper Quesadilla


Ingredients 

Flour Tortillas

Buffalo Ranch Dressing

Shredded Cheese

Diced Onion

Jar of Jalapeno Slices

Directions

Butter one tortilla, and lay it butter side down in a hot pan. Now you want to spread buffalo ranch dressing on the tortilla. You will want it thick. Next add your cheese, jalapeno and onion. If you have shredded chicken, you could add it as well. Take the second tortilla and butter it but leave the butter side on top. Cook till both sides are golden and your cheese is melted. Cut into fourths. Eat with sour cream or even salsa.


BBQ Roast Beef Sandwiches

BBQ Shredded Roast Beef Sandwiches

Ingredients

BBQ Sauce

2 Cups of Ketchup
(You can find low salt ketchup)
1/2 C Apple Cider Vinegar
1/4 C Coca Cola
1/3 C Brown Sugar
1Tsp Onion Powder
1 Tsp Dry Mustard
1/2 Tsp Garlic salt or you can use garlic powder

BBQ Roast Beef

BBQ Sauce you just made
Roast

Directions

In a crock pot put your roast, and cover with BBQ sauce. Cook on low for 3 hours, then cook on high till it shreds easy with a fork. Serve on a bun. 


 

Low Salt Chicken Stir Fry

 

(Better picture will be taken at a later date)


I created this meal with what I had in my pantry and freezer. This dish can easily be made with leftover chicken and any frozen veggies in your freezer. This dish is low salt, but you can use soy sauce if you choose. Soy sauce even low sodium is high in sodium. So, I used Worcestershire Sauce and Amino Acid


Chicken Stir Fry

Ingredients

Chicken Breasts or thighs diced up. 

2 bags of frozen stir fry mix or whatever frozen veggies you have

5-6 T Garlic Powder 

1 Tsp Ginger

1 Tsp Salt

2 T Pepper

2 T Garlic Rub (optional)

1/4 C Worcestershire Sauce

2 T Amino Acid

If you want, you can just do 1/4 C of soy sauce if you are not watching salt. 

Rice (Cook according to directions for the amount you need)


Directions

Dice up your chicken and set it aside. In a skillet or pan put in a swirl of the oil you use. I personally use Olive Oil, but you can do whatever you have. Heat it. In a bowl mix your seasonings and toss your chicken in it. Easiest way is mix seasonings in a bowl and dump in a baggy with chicken. No mess shake chicken bag. Put seasoned chicken in the skillet and cook till chicken is pretty much done. Start your rice. Toss in your Worcestershire sauce and amino acid (or soy sauce). You need it to be able to coat chicken and frozen veggies. Once you add the sauce, dump in your frozen vegetables and stir to coat. Cook until the vegetables are heated through, and everything is mixed and cooked. 


Serve on top of rice. I used brown rice, but you can choose whatever rice you want.

Leak and Spinach Brussel Sprouts

 


As a kid I use to hate Brussel sprouts, but in the last 5 years or so I started to enjoy them. The biggest thing is how it is cooked. I swear most people that hate them have had them badly cooked. Anyhow, I make a great bacon brussel sprouts. You can use low sodium bacon, to keep salt low.  I also decided to start to use Leeks. They are a mild onion and so good. My husband who is picky how his onions are loves them. 

Ingredients

1 bunch of Brussel sprouts
1 package of bacon
1 bag of spinach raw. 
1 Leek
Garlic

Directions

Dice up your raw bacon and start frying it. Drain some of the grease. Chop up your brussels sprouts, spinach, garlic and leeks. Set aside. When the bacon is almost crispy, add in your vegetables except spinach. You will put spinach in last. Cook till the Brussel sprouts are cooked but not smooshy. Once it's done add in a little bacon grease, and spinach. Cook slightly. You do not want soggy spinach or Brussel sprouts.


Cracked Pepper Pork Loin

 


We often purchase these pork loins. you get two of them for $10-11. We buy the unseasoned because of how much salt ins located in the seasoned ones.  I take both of them and season them, so on busy nights I can just cook it. 

Now this pork loin can be cooked two ways. I hate air fryers, but I make an exception for a few food items. We own rotisserie air fryer and so I use it. However, you can easily do this in the oven too, smoker or grill. 


Ingredients

2 Pork Loins 

Cracked Pepper or fine grind is okay too

Favorite rub 

Directions

Lay out both pork loins on a cutting board. First layer is your favorite rub. I use a rub that my husband and I made on our wedding. However, you can use your own favorite rub.  Do not do a heavy rub unless you want. The cracked pepper is the star of the show. Once you do the light rub then you take the pepper and rub it all over the pork loin. You can do it heavily or lightly it really is up to your spice level. 

Put one in a baggy or cook both it is up to you. If you have a rotisserie air fryer, then you can use that and cook it for 40 minutes. However, if you don't own that version, you can bake it. In a deep baking pan put in a cooling rack that can be used in the oven. Set the pork loins on it and cook for an hour. This will allow air to flow through. Once it is cooked and juices run clear, then remove it and slice it up. 

Pantry Taco Soup

 



Everyone often has a pantry of items and no idea on what to do with it. I was in that mode this week when I created this. I have a bunch of Rotel, tomato sauce and assorted things, so I put it all together to create this great soup.  

Guess what?! This is very low in salt too. Now you can use full on salt if you want, but my husband is low salt. 


Ingredients

Two Big Cans of Tomato Soup

2-3 lbs of Ground Beef

2 Corn on the Cob with corn cut off. It gives it a nice crunch.

1 Can of Rotel *drained*

1/4 C Taco Sauce

Taco Seasoning packet OR homemade taco seasoning

2-3 T Cilantro diced up

1/4 C Half in Half

32 oz of Broth. I only had chicken, so I used it. But I plan to use beef broth.

Taco Seasoning 

2 T. Chili Powder

2 Tsp Onion Powder

2 Tsp Cumin

1 Tsp Salt

2 Tsp Smoked Paprika

1 Tsp Cracked Pepper

Combine and stir. This can be kept in a jar away from heat

Directions: 

Brown your ground beef, drain and set aside. In a pot, add your tomato sauce, corn, taco sauce, rotel, taco seasoning, Cilantro, half and half, broth and ground beef. Stir till combined. Heat on low, making sure you stir often. 

This soup can easily be frozen for later use or used over rice to make yet a second meal.

No Churn Maple Pecan Ice Cream

 


 

Ingredients

1 Small Package of Pecans

1 Small Carton of Whipping Cream

1 Can Condensed Milk

1/4 Cup of Maple Syrup

1 Tsp Vanilla

2 Tsp Sugar 

Directions

In a mixer bowl, whip your whipping cream till its stiff. Slowly add in your Condensed milk, maple syrup, vanilla and sugar. Fold in till combined. Add in your pecans slowly folding them in. Do not be hard with them. Pour into freezer safe containers and freeze it for a full day. Eat and enjoy!

Meghans Zucchini Boats


Zucchini Boats 


4 Zucchinis cut length ways, and the middle scooped out.

1 C Cooked Rice

1 Small Squash Diced up

Half onion Diced up

1 C orange pepper diced

1 garlic clove minced

1 Can of Diced tomatoes

1 lb Ground Beef Browned

2 T Garlic Salt

1 C. Cheddar

Cut and set aside your Zucchini. Start your rice according to the directions. Then brown your hamburger. While those are cooking dice up your squash, onion and peppers in 1 T butter. Once they are sauteed mix them in with your rice, canned tomatoes, hamburger and garlic salt.  Mix it all together. Now, fill your boats. Cover them with aluminum foil and baked at 400 degrees. Once Zucchinis are soft, then cover with cheese. Bake till cheese is melted. 

Eat and enjoy 

Bacon BBQ Meatloaf


 

Bacon BBQ Meatloaf


Ingredients 


2 lbs of ground beef

1 1/2 C Panko or oats

2 eggs

1 C bbq sauce

2 jalapeños chopped

2 T salt

2 T pepper

9 slices of bacon

2 cups of cheese(I used shredded but next time I’m using a block of cheese)

Toppings:

1 C brown sugar

Sprinkle of red pepper flakes

1 c bbq sauce


Directions

In a bowl mix your hamburger, salt, pepper, 1 cup of bbq sauce, jalapeños, eggs and panko till combined. Set it aside.

Preheat oven to 400

Take a cookie sheet and put bacon down. One right next to the other leaving no spaces. Take your meatloaf mix and put on top of bacon. Spread it out so it covers the bacon. Take your cheddar cheese and sprinkle on top.

Now the tricky part. You will now roll up the meatloaf and bacon. Take one side and make sure you got the bacon with it. Roll it up slow and tight. It’s hard so don’t get discouraged. Once it’s rolled up make sure it’s tucked.

Get a baking pan with sides and lay in a cooling rack. Spray it with non stick spray. Now gently place your meatloaf on top. Now get your brown sugar and pat it all over the bacon. Top with red pepper flakes.

Put it in the oven and bake till bacon starts to look crispy. When there is 10 minutes left take it out and cover it with 1 cup of BBQ sauce. Bake it till it’s caramelized.

Take it out of the oven and let it rest. Then carefully put it into a platter.

Pico De Gallo

 


Pico De Gallo

Ingredients


1 lb of Roma tomatoes(no seeds)

2 jalapeños (no seeds)

1 red onion

1 C of cilantro

1 T cumin

1 T salt

1 lime


Directions

I use a food processor for this but if you don’t have one just dice. Take your Roma tomatoes and slice them removing the seeds. Cut them and put them in a food processor if you have one. If not dice small. Take your onion, and jalapeño and dice them. Make sure you take seeds out of jalapeños. If you have a food processor you can combine. Process till it’s in smaller chunks. In a bowl combine all ingredients. Add cumin, salt and lime juice. Stir and combine. You can taste and adjust cumin as needed as well as salt.

If you hate cilantro or jalapeños they can be omitted. This makes about 4 cups of Pico De Gallo. Serve with chips.

Italian Beef

Ingredients


Chuck Roast

1 Cup sliced banana peppers with juice

2 C Beef Broth

1 1/2 packets of Louis Italian Beef Seasoning

1 can of Chili peppers


Directions

In your crock pot put in your meat. Then mix your seasoning in your broth and pour over roast so that it’s half way covered. Add your banana peppers and chili peppers. Cook on low for 5-6 hours, then on high till it’s falling apart. Shred it and serve it on top of mashed potatoes.

Cheeseburger Quesadilla

Ingredients

2 lbs of ground beef

2 tb garlic

2 T onion powder

1 T garlic powder

1 T of Worcestershire Sauce

Salt and pepper to taste

1 Tsp Steak seasoning

Tortillas

Toppings

1 cup chopped pickle

1 onion chopped

Cheddar cheese

Sauce

1 cup ketchup

1/2 C Mustard


Directions

In a skillet brown your hamburger, add seasonings and garlic. Set the hamburger aside. In a bowl mix up your sauce and chop toppings. Set aside. Get a skillet and butter one side of your tortilla. Lay butter side down. Take your sauce and spread a thin layer over it. Sprinkle with cheese. Add hamburger mixture. Add toppings a little more sauce and cheese. Butter another tortilla and keep butter side up. This helps brown the tortilla. Cook until it’s golden brown, gently flip over and brown the other side. Cut into triangles and enjoy.

Pizza Lasagna

 


Pizza Lasagna 


Ingredients

1 box lasagna noodles

2 packages of sausage

1 pepper chopped

1 onion chopped

Diced tomatoes Italian style

1 T Olive oil

Marinara Sauce

Pepperoni

Mozzarella and Cheddar Cheese

2 cups sour cream

1 T garlic

1 T Italian seasoning

Directions

Brown both packages of sausage and set aside. Take a small sauce pan and add a drizzle of olive oil. Turn it on medium to low heat. Chop up your green peppers and onions. Add the peppers, onions and garlic in the sauce pan. Cook them for a bit then add your Italian seasoning. Add in 2 cans of diced tomatoes drained. Cook on low. Once it’s cooked then add in marinara sauce. Set aside.

Boil the noodles or use oven ready noodles. Take out a baking dish. Lay down a layer of noodles. Add sauce, then sprinkle with sausage. Put spoons full of sour cream and then top with pepperoni. Sprinkle cheese. Keep layering till you reach the top. Add sauce, sausage, pepperoni and cheese. Bake at 400 for an hour. Let it cool and then enjoy!
