Broccoli Cheese Soup

 


Broccoli Cheddar Soup 

Fresh Broccoli chopped. I buy bags of already chopped. 

1/2 C Butter

1/3 C Flour 

Spoon full of garlic.

2 Tsp Salt

2 Tsp Cracked Pepper

2 Tsp Garlic Powder

2 Cups of Chicken Broth 

2 Cups of Heavy Cream 

2 C Cheese


In a saucepan add butter. While its melting put flour in a bowl with seasonings. Once the butter is melted then you need to add in flour mixture. Whisk till butter is absorbed. Then slowly add in your broth, heavy cream and cheese. Whisk as you add it in. Once its combined and all smooth, then you will add your chopped broccoli. Cook on low till broccoli is tender. 


Serve with garlic bread. 


Low Salt options: You can use no salt chicken broth. However, the cheese does add in a bunch of salt. If you use the no salt chicken broth it helps lower the salt in it. 

Buffalo Mac N Cheese

 


Buffalo Chicken Mac N Cheese

This recipe utilizes Buffalo Chicken Dip. You can get two meals out of one. 


Crock Pot Buffalo Chicken Dip 

3 Chicken Breasts 

1 Package of cream cheese softened.

1 cup of Hot Sauce 

1/2 Cup Ranch 

1 Cup of cheese 


In a crock pot cook your chicken till it is easy to shred. High for 4 hours would work. When chicken is shredded add in your cream cheese and cut it into chunks and place on top of chicken. Then add your hot sauce and ranch. Add half of the cup of cheese and mix together as best as you can. Cook it for a few more hours stiring every few minutes to mix it all together. Once the cream cheese has melted add the rest of the cheddar cheese to the top. Cook till melted. Serve it hot. 


Now for the Mac N Cheese!

1 box of spiral mac or whatever pasta you want. 

1 C Heavy Cream 

2 Cups of the dip

2 cups of Cheddar

1 T Garlic Powder

1 T Cracked Pepper

Salt to taste


Boil pasta according to the box. Drain it and then put it back in the pan. Add your 2 cups of dip, heavy cream, and cheddar cheese. Mix till combined and all the cheese is melted.  

**If you refrigerate the dip, make sure you microwave it with a dash of cream to loosen it. ** 


It is that easy and so good. 


Chicken Jalapeno Corn Soup

 

 

Chicken Jalapeno Corn Soup 

2 Chicken breasts cooked and shredded. 

2 Cut up jalapenos. 

1 bag of frozen corn 

1 C Shredded Cheddar 

1 lb. of bacon diced up. 

32 oz chicken broth 

2 Cups of Heavy Cream

1 Tsp of Red Pepper Flakes

Spoon full of garlic.

1 bag of Diced frozen potatoes 

Salt to taste and cracked pepper. 


I use a crock pot for the chicken usually, but you do not have to. However, if you do feel like it would be easier, I add the broth, chicken, cut up jalapenos. Cook till you can shred it. If you want you can also use grilled chicken, or even rotisserie chicken. 

Once your chicken is cooked, then it's time to start the bacon. In a pan I add diced up raw bacon, jalapenos and red pepper flakes. Cook till the bacon is cooked all the way, drain any fat off. Then Add in potatoes, and corn.  I use frozen cubed potatoes to save on time, but you can cut them up if you wish. Next you will add your broth, and seasonings. Let it cook till potatoes and corn are fully cooked. Next add in your cooked shredded chicken. If you used the crock pot method, then just add the shredded crock pot mixture to the pot. Broth and all. Now you will add in your heavy cream and cheese. Stir it all up and heat till it's nice and hot. Taste and if it needs more salt and pepper just add it.


Eat and enjoy!


Low salt options: I use a slow sodium bacon and a no salt broth. This will bring the salt amount lower. 

 

Crock Pot Chicken Rice Soup

 


Crock Pot Chicken Rice Soup

3 Boneless Skinless Chicken breasts or thighs
1 32 oz Chicken Broth 
1 Can of Cream of Chicken Soup 
1 bag of frozen veggies 
1 Cup of Rice
1 Tablespoon of Rosemary 
1 T Cracked Pepper 
1 T Salt
1/3 C minced garlic
(You can use less but we love garlic)

In a Crock Pot put in your chicken breasts, chicken broth, spices and garlic. Cook on low for 6 hours and shred chicken. Add in your mixed veggies and cook a few more hours. While it is cooking the last stretch make your rice. I use a rice cooker for all my rice needs because it is so easy. You can make it however you would like as we will just be adding it when the veggies are cooked.  Once your rice is cooked add it into the soup and mix it all together.

Serve in a bowl and enjoy! 

Salt Free Options: Campbells has a no salt cream of chicken soup. I also use no salt chicken broth. This keeps the salt super low. When you add up salt content for the whole crock pot of soup its low.
